black bean queso
Oh lord people. You know I have a weakness for queso. I’m not even picky about it. Scoop it out of the Tostitos jar, microwave it and I’m all set. So when I found a queso that is easy to make, flavorful and has black beans in it…well then I’m about to die of happiness. I mean black beans practically make the queso a vegetable, right? It would be at my son’s school, but that’s a whole other rant I’ll go on later.
what you need:
2 cans of Hormel chili, no beans
1 8oz block of cream cheese
4 oz Velveeta cheese
1 15 oz can black beans, rinsed and drained
1 tablespoon chili powder
1 1/2 teaspoon cumin
1/2 teaspoon cayenne
cilantro, chopped for garnish
tortilla chips
what to do:
in a microwave safe bowl combine the first 3 ingredients.
Heat for 3 minutes in the microwave, stir thoroughly and then heat again for another 2 1/2 minutes.
remove, add black beans and spices, stir well to combine.
transfer to a serving dish, sprinkle with cilantro.
Serve and enjoy.
Black Bean Queso
Ingredients:
