mini apple and smoked mozzarella calzones
For as long as I can remember I have loved pizza. But you know what I love more? Calzones. I don’t know if it is because I don’t have to share them, because the crust is thicker, or because there’s extra cheese. Possibly it’s because of all three. And while I’ve had enough of the pepperoni pizza monkey bread (I’ve made it 3 times in one month!), I’ve never had enough of the pizza/calzone concept. What I’ve tried to do today is ease up a little on the pepperoni and up the ante with some fruit. This recipe is practically healthy with all those apples and all…right? Regardless, its delicious and the proof is in the fact that there were none left when I gave them to my husband and his playdate.
what you need:
1 refrigerated pizza crust
1 yellow onion, sliced thinly
1 tablespoon butter
1 granny smith apple, peeled and diced
1 cup diced smoke mozzarella cheese
1 cup shredded parmesan cheese
1/4 cup fresh thyme, chopped
1/4 cup fresh chives, chopped
olive oil
what to do:
preheat oven to 500
melt butter over medium heat in a saucepan and add thinly sliced onion
cook and stir occasionally until the carmelize (do not let them burn). This should take 25 minutes or so. remove and let cool.
roll out pizza dough to a 10×13 rectangle.
cut the dough into 3×3 squares (roughly)
arrange stuffing ingredients and spread ingredients evenly on to the 12 or so pieces of dough. (I went in the order of onion, apple, mozzarella, parmesan, herbs)
Fold opposing corners to form a triangle and press the seams together firmly. Brush with olive oil, sprinkle with kosher salt.
Bake for 14 minutes or until the calzones are crispy brown.
Serve and enjoy.
