pepperoni pizza puffs

If you want to know why I’m never really embracing bikini season…it’s because I love pepperoni pizza too much.  I am not one of those bitches naturally skinny people who can indulge in pizza and still run after my swim/drowning children with grace.  So I embrace my pizza and my ruching Spanx swim suit with pride.  Some days I swear I’m going to give up all the pizza, but really my kids are good swimmers now, so how often will I have to run on the beach?  really?

These pepperoni pizza puffs are tiny, so no need to feel guilty about them, unless you happen to eat the whole batch in one sitting.  Who would do that?  Bueller…Bueller.

what you need:


3/4 cup all purpose flour

3/4 teaspoon baking powder

3/4 cup whole milk

1 egg

1 cup shredded mozzarella cheese

4 oz pepperoni, diced

what to do:

preheat oven to 375

in a large bowl whisk together flour and baking powder.

add in milk

and egg.

stir together

Side note: I LOVE this whisker my mom got me from the MOMA store

and then add cheese and pepperoni.

Stir well and then let stand for 10 minutes

stir thoroughly and divide evenly into a 24 cup mini muffin pan, well greased.

put in oven and bake for 20-25 minutes, or until golden and puffy.

eat immediately, or if you can wait serve with pizza sauce as a dipping sauce.

serve and enjoy!
