strawberry salsa
I got completely swept up in Spring fever last week when it was 70 degrees, my daffodils were blooming, and strawberries were in abundance (and on sale) at the HT.
So deep in the haze of my “fever” I decided it was high time we made some strawberry salsa. In hindsight, it was February, it snowed the next day, and the strawberries were from Florida. But the salsa’s still good. So tuck this recipe away for when it really is Spring, the strawberries are local, and the “fever” has disappeared.
what you need:
1 pound of strawberries, diced
1 cup seedless red grapes, sliced in half
2 teaspoons sugar
1/2 jalapeno, seeded and minced
1 tsp lime zest
1/4 cup fresh lime juice
1/2 cup chopped cilantro
what to do:
in a medium bowl sprinkle sugar over strawberries. Stir to combine.
Add grapes, jalapeno, lime zest and juice, and cilantro.
Stir to combine.
Serve with cinnamon sugar pita chips and enjoy.
