margarita watermelon

My daughter LOVES watermelon.  She could eat it for all three meals a day and then ask for it for dessert.  In fact, that is nearly what she did for the past few weeks at the beach.  ”I’ll have watermelon with a side of cheetos, please”  One cancels out the other…right?

So after 12 days at the beach, watching her slurp down countless slices of the melon (ruining every clean piece of clothing she had!) while I slurped down a beer, wine, margarita, John Daly…you get the point, I had an epiphany.  What if I put MY alcohol into HER watermelon.  And now before you get all…you shouldn’t serve alcohol to your five year old on me… please remember that I had to sleep in the same bed with her…so what would you do?  I jest.

But what came out of this was the slurp worthy, down right tasty, and not appropriate for your 5 year old margarita watermelon.  Again, like the cheetos, one cancels out the other right?

what you need:

1 small seedless watermelon

1 cup tequila

3/4 cup triple sec

1 cup sugar

kosher salt

what to do:

cut watermelon up into triangle and lay in a single layer into 2 9×11 brownie pans

in a saucepan, heat tequila, triple sec and sugar over medium heat until it boils.  Stir occasionally.  Let boil for 1-2 minutes.  Remove from heat and cool.

Pour tequila simple syrup over watermelon, cover and put in fridge for at least 1 hour but up to 24 hours.

before serving, sprinkle kosher salt over the tips of the watermelon.

Serve with lime wedges and enjoy.

Watermelon Margaritas

Ingredients:
