peach bruschetta

When my mom came to stay with us after I had my son (OMG…8 years ago)  Not only did she clean out my fridge and find 7 jars of kalamata olives (seriously) but she also looked through my recipe binder each night and made dinner for us.  Honestly, that treatment alone might be reason enough to have another…or not.  But what we all realized when she did this, was that I am completely drawn to recipes that incorporate fruit.  I just can’t stay away.  So when driving through all the farm stands in New Jersey (best farm stands ever) and South Carolina, I just couldn’t resist picking up a bushel of peaches.  I hope you like peaches too…because a bushel is a lot of fruit…so there are more recipes to come.

what you need:

4 peaches, skinned and diced

3/4 cup red pepper, diced

1/2 cup red onion, chopped

3 tablespoons sugar

1 lime, juiced

1/4 cup chopped cilantro

1 round of brie

1 loaf of french bread

what to do:

preheat oven to 350

combine the peaches and next 5 ingredients. in a medium bowl.

slice french bread into 1/2 inch slices.  Spread slice of brie on each piece of bread.

heat brie and bread in oven for approximately 7 minutes (until bread is toasted and brie is melted)

remove and put a heaping tablespoon of peach mixture on each slice.

Serve and enjoy!

Peach Bruschetta
