tzatziki sauce
Ok…before I get started can we just discuss for a minute what a horrible speller I am? I mean, for a girl who likes grammar, I cannot spell. Period. So what the hell am I doing making recipes like bruschetta and tzatziki sauce? I have no business writing these words. I have misspelled them 110 times each to be exact. And you know who is not help whatsoever? My spell check. If it were up WordPress, I would be writing about Brunelleschi and Kazantzakis…seriously…those are the words it auto corrects to. Thanks for the help WordPress.
And as long as I am confessing things I can’t do, let’s discuss the pathetic “garden” I have growing this year. For a girl who grew up eating peas right out of the pod, raspberries from the bush, and corn right off the stalk, my one puny little, green, hard as a rock tomato growing in my Topsy Turvy is really an insult to all things home grown. The infomercial makes it seem SO easy. Can we just say my tomato harvest is not exactly “as seen on TV.” Thankfully I have a friend who has a thriving garden and has been willing to share his veggies with me. And while the size of his cucumbers makes me blush…they are quite delicious (why can’t I talk about this without submerging my mind in the gutter??) and the tzatziki sauce is a sure fire hit for any summer get together.
what you need:
1/4 cup olive oil
2 tbsp balsamic vinegar
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp fresh ground pepper
1 cup greek yogurt
1 cup sour cream
2 cucumbers, peeled, seeds removed and chopped (or 1 of my friend’s extra large cucumbers)
2 tbsp fresh chopped dill
pita chips or chopped veggies
what to do:
in a small bowl, combine olive oil, vinegar, garlic, salt and pepper. whisk together
in a medium bowl, whisk together the sour cream and Greek yogurt.
add olive oil combo to yogurt. stir to combine thoroughly.
add cucumbers and dill and mix.
serve and enjoy
