Have you all been watching the Olympics? We have. In fact, our DVR is starting to smoke a little bit we have been using it so much. 17 channels of all Olympics all the time is a little too much for this sports obsessed family. My five year old doesn’t even really get the concept of the Olympics, but just asks, “who should I root for blue or green” and then goes from the there whole heartedly.
So my second question is…Did anyone see the Women’s Volleyball semi-final last night? Wowsers. Not only was that win against China super-exciting…but damn! those girls have awesome bodies if I do say so myself. When I grow up, I’m going to be a professional volleyball player. And in order to train, I’m going to quit my 4 miles on the treadmill and instead today I’m going to run in place for 40 minutes in the kids sandbox. I should be looking like Kerri Walsh and Misty May Treanor in no time!
And right after I train, I’ll reward myself with one of these mini flat bread pizzas. (Do you understand why my professional volleyball uniform will have to be designed by Lands End?…I have issues people…I do.)
what you need:
1 can refrigerated biscuits
16 oz shredded mozzarella cheese
for bbq chicken pizza:
1/2 cup bbq sauce
1 cup shredded rotisserie chicken
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
for Greek pizza:
1/2 cup Greek yogurt
1/4 cup feta cheese
1/2 cup chopped kalamata olives
1/2 cup sun dried tomatoes
1/4 cup chopped fresh mint
1/4 cup chopped fresh dill
what to do for BBQ chicken pizza:
spread biscuit dough out into an oval shape about 6 inches in length
spread bbq sauce on biscuit.
sprinkle cheese then chicken, onion and cilantro on pizza
bake at 375 for 10-15 minutes
what to do for Greek Pizza:
spread biscuit dough out into an oval shape about six inches in length
combine greek yogurt and feta (mash feta with a fork). spread on biscuit
sprinkle olives, sun dried tomatoes, mint, dill, and mozzarella cheese on pizza
bake at 375 for 10-15 minutes
serve and enjoy!
