I brought the watermelon…cake.

Oh lord people.  I am totally out of my league this weekend.

I have signed up to do a triathlon.  What in the world I was thinking, I will never know.

Not only do I have to swim, bike, and then run. But I am doing it with my husband (who has not trained a lick and will still beat me and kick my pride to the ground) and about 70 of my neighborly acquaintances and facebook friends (who out there in the blogosphere can teach me how to prevent people from tagging me in pictures without my approval??)

But you know what I am most concerned about regarding this athletic adventure?  Some might think it is the swim…nope.  The bike…nope.  The humiliation of being beaten by your untrained husband…nope.

It’s the clothes I have to wear.

A tri suit.

Granted if I looked like an Athleta model, this would be no problem.  But I don’t.

Getting this thing on is like putting on a pair of full bodied black spanx, that are wet.

Think Ross from Friends trying to get his leather pants on.

I have to make my husband leave the room when I am getting dressed.  It’s that bad.

So when I arrive at the triathlon, completely out of place, feeling like Baby:

“I brought the watermelons”

I’m going to wish I ate more of this cake and less of whatever else I’ve been stuffing my face and tri suit with.

what you need:

1 large watermelon

2 cans of full fat coconut milk, chilled in the fridge for at least 6 hours

1/4 cup honey

2 teaspoons vanilla

1/2 cup slivered almonds, toasted

fruit to decorate the top

what to do:

Cut the rind of the watermelon and cut it into your desired cake shape

open the cans of coconut milk and scoop out the solid parts on top.  Put in a mixing bowl. (the water left in the bottom is great coconut water, save for later or drink on the spot!)

Add honey and vanilla to the coconut milk solids.  Mix at a medium speed until smooth

put whipped coconut milk in the fridge for at least 30 minutes to firm it up a little bit

“frost” the watermelon with whipped coconut milk, cover edges with toasted almonds and decorate the top with assorted fruit.

serve and enjoy!

    Don’t feel like you are alone!!! Most folks are feeling the same way as you. Plus you guys are running a TRIATHLON. At the end you get to call yourself a triathlete – seriously, it is worth it!

    BTW, Watermelon Cake? Oh yeah, totally going to do that!!!
